Seven years after joining Edmonton’s food scene with the opening of RGE RD, one of the city’s first farm to table focused restaurants – award-winning hospitality duo Chef Blair Lebsack and Caitlin Fulton introduced The Butchery by RGE RD to Edmonton November 2020.

Open five days a week, The Butchery by RGE RD offers on-the-spot custom cuts, RGE RD’s signature questionable bits, homemade soups and stocks, house-cured meats, sausages and more. The market-style setting will include a retail area filled with provisions for purchase.

Products made in-house include pickled vegetables, wood-fire baked breads and rillettes. They share the shelves with Alberta-based producers and purveyors including Gold Forest Grains and Sylvan Star Cheese.

Honouring the connection to livestock from birth to block, The Butchery highlights farms raising the animals being served across the counter including Nonay Beef raised by Lakeside Farmstead in Sturgeon County, Nature’s Green Acres Pork raised near Viking, AB and Paradise Hill Bison raised in Barthel, SK.

From the moment one enters the 4,000-sq-ft. space, it’s clear this isn’t an average butcher shop. It’s a curious and creative blend of old and new. Love is in the details and it’s palpable.

Vintage cast aluminum lighting immediately sets the tone for the unique experience the space will offer. A custom-made red oak mercantile table is centred in the space while second-hand treasures, family heirlooms and souvenirs from European travels pique the curiosity of those delighted by attention to detail. An 82″ x 82″ custom tile treatment of The Bison – symbolic of good health, strength and gentleness acts as a focal point and around the corner in spacious restrooms, custom wallpaper offers a cheeky wink and nod to every carnivore.

Although faced with the challenge of launching in the midst of a global pandemic, BONAFIDE supported The Butchery by RGE RD’s opening by co-ordinating a series of media interviews, morning show segments, social media management and community partnerships.
